This is a quick and easy delicious recipe based on a popular Spanish tapas dish. The chickpeas offer a great protein source.
Equipment
- 1 Chopping Board
- 1 Knife
- 1 Frying Pan
- 1 Wooden Spoon
Ingredients
- 2 tbsp olive oil
- 4 cloves garlic finely chopped or crushed
- 1 red onion chopped finely
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 125ml passata
- 2 large handfuls baby spinach
- 1 tin chickpeas, drained and rinsed
- 1 pinch sugar
- salt and pepper
Instructions
- Heat olive oil in a frying pan.
- Add chopped onion and fry for 2 minutes.
- Add garlic and cook for 2-3 minutes until starting to turn golden brown
- Add smoked paprika, cumin, salt, pepper and sugar and continue to cook for a minute
- Add the passata to the pan and cook for a couple of minutes.
- Tip in the spinach and stir together. Continue to cook over a low heat for a few minutes until the spinach has wilted and softened.
- Tip in the chickpeas and add more salt and pepper to taste
- Cook through for 3-4 minutes then serve with crusty bread or toast
