This is a quick and easy delicious recipe based on a popular Spanish tapas dish. The chickpeas offer a great protein source.

Equipment

  • 1 Chopping Board
  • 1 Knife
  • 1 Frying Pan
  • 1 Wooden Spoon

Ingredients
  

  • 2 tbsp olive oil
  • 4 cloves garlic finely chopped or crushed
  • 1 red onion chopped finely
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 125ml passata
  • 2 large handfuls baby spinach
  • 1 tin chickpeas, drained and rinsed
  • 1 pinch sugar
  • salt and pepper

Instructions
 

  • Heat olive oil in a frying pan.
  • Add chopped onion and fry for 2 minutes.
  • Add garlic and cook for 2-3 minutes until starting to turn golden brown
  • Add smoked paprika, cumin, salt, pepper and sugar and continue to cook for a minute
  • Add the passata to the pan and cook for a couple of minutes.
  • Tip in the spinach and stir together. Continue to cook over a low heat for a few minutes until the spinach has wilted and softened.
  • Tip in the chickpeas and add more salt and pepper to taste
  • Cook through for 3-4 minutes then serve with crusty bread or toast
