Ingredients

tbsp
olive oil
4
cloves
garlic
finely chopped or crushed
1
red onion
chopped finely
1
tsp
smoked paprika
1
tsp
ground cumin
125ml
passata
2
large handfuls
baby spinach
1
tin
chickpeas,
drained and rinsed
1
pinch
sugar
salt and pepper
Instructions
Heat olive oil in a frying pan.
Add chopped onion and fry for 2 minutes.
Add garlic and cook for 2-3 minutes until starting to turn golden brown
Add smoked paprika, cumin, salt, pepper and sugar and continue to cook for a minute
Add the passata to the pan and cook for a couple of minutes.
Tip in the spinach and stir together. Continue to cook over a low heat for a few minutes until the spinach has wilted and softened.
Tip in the chickpeas and add more salt and pepper to taste
Cook through for 3-4 minutes then serve with crusty bread or toast
