This is one of the quickest and easiest pasta sauce recipes you’ll find. Add everything to a blender, whizz up then stir into freshly cooked pasta. Delicious, quick and full of super green goodness!

  • 1 avocado
  • 1 tbsp olive oil
  • 2 cloves garlic (crushed)
  • 2 handfuls baby spinach
  • 1 handful fresh basil
  • 50 grams grated parmesan
  • 300 grams pasta (such as fusilli, farfalle, penne or spaghetti)
  • salt and pepper
  • red chilli flakes (to serve)
  1. Place pasta in a saucepan of boiling salted water and cook for the required time according to type of pasta used
  2. Meanwhile place avocado, olive oil, garlic, spinach, basil, parmesan, salt and pepper in a blender and blitz till smooth. Add a little pasta water if the consistency is too thick.
  3. Drain pasta once cooked and return to the pan. Stir through the pasta sauce and heat through.
  4. Serve topped with a sprinkle of red chilli flakes and extra parmesan.
