This is one of the quickest and easiest pasta sauce recipes you’ll find. Add everything to a blender, whizz up then stir into freshly cooked pasta. Delicious, quick and full of super green goodness!

- 1 avocado
- 1 tbsp olive oil
- 2 cloves garlic (crushed)
- 2 handfuls baby spinach
- 1 handful fresh basil
- 50 grams grated parmesan
- 300 grams pasta (such as fusilli, farfalle, penne or spaghetti)
- salt and pepper
- red chilli flakes (to serve)
- Place pasta in a saucepan of boiling salted water and cook for the required time according to type of pasta used
- Meanwhile place avocado, olive oil, garlic, spinach, basil, parmesan, salt and pepper in a blender and blitz till smooth. Add a little pasta water if the consistency is too thick.
- Drain pasta once cooked and return to the pan. Stir through the pasta sauce and heat through.
- Serve topped with a sprinkle of red chilli flakes and extra parmesan.
