In our house this is called 'Maisie Cake' - named after my Nan. She used to make this all the time when we were growing up. It is such an easy cake to make and has so few ingredients. It also keeps really well - actually improving the longer it is kept before cutting as the moisture from the tea soaks right into the dried fruit. You can make this cake vegan by replacing the egg with a 'flax seed egg' which is made by combining 1 tbsp ground flaxseeds with 2 tbsp water and leaving to thicken for a couple of minutes. This loaf doesn't contain any type of fat so is delicious sliced and spread with a little butter or margarine.

Ingredients
  

  • 240 grams Dried Fruit such as raisins, sultanas, cranberries, apricots, mixed peel or a mixture of a few types
  • 175 ml Hot Black Tea
  • 125 grams Dark Soft Brown Sugar
  • 240 grams Self Raising Flour
  • 1 Egg or flax seed equivalent (1 tbsp ground flaxseeds and 2 tbsp water left to thicken for a few minutes

Instructions
 

  • In a large mixing bowl combine the dried fruit, sugar and tea and leave to soak for at least 30 minutes.
  • Preheat oven to 175°C and grease a loaf tin.
  • Add flour, egg (or flax seed mixture) to the soaked fruit and stir gently just to combine.
  • Pour into the loaf tin and bake for 1 hour until golden brown and a skewer comes out clean when inserted into the centre of the cake.
