This is a refreshing and tasy dip and a great alternative to guacamole. Very easy to make with just a few ingredients whizzed together in a food processor. Frozen peas are ideal for this dip if you don't have fresh.

Ingredients
  

  • 225 grams Peas
  • 175 grams Silken Tofu
  • 25 grams Fresh Parsely chopped
  • 2 tbsp Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 2 cloves Garlic crushed
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 tsp Red Chilli Flakes
  • 1 tsp Lemon Juice

Instructions
 

  • Cook the peas in boiling water for 4 minutes then refresh under cold water.
  • Place all ingredients in a food processor and whizz together until nearly smooth.
  • Serve in a bowl with tortilla chips, pitta bread, crisps or crudities to dip.
