Greek Style Tomato Fritters

Crispy on the outside, soft and herby on the inside - the perfect little bites to bring sunshine to your table. Delicious for brunch with eggs and avocado or as a side dish

Equipment

  • 1 Mixing Bowl
  • 1 Frying Pan
  • 1 Chopping Board
  • 1 Knife
  • 1 weighing scales
  • 1 Spatula

Ingredients
  

  • 130 grams Fresh Tomatoes finely chopped
  • 1/4 red onion finely chopped
  • 1 clove garlic crushed
  • 1 egg
  • 50 grams plain flour
  • 1/2 tsp baking powder
  • 1 tbsp fresh dill, parsley or oregano finely chopped
  • 1 tbsp olive oil for frying
  • salt and pepper

Instructions
 

  • Place tomatoes, onions and garlic into a bowl
  • Add egg, flour, baking powder, herbs and salt and pepper and mix into a thick batter
  • Heat olive oil in a frying pan and drop in spoonfuls of the batter. Fry for 3 minutes each side until golden brown
