
Greek Style Tomato Fritters
Crispy on the outside, soft and herby on the inside - the perfect little bites to bring sunshine to your table. Delicious for brunch with eggs and avocado or as a side dish
Equipment
- 1 Mixing Bowl
- 1 Frying Pan
- 1 Chopping Board
- 1 Knife
- 1 weighing scales
- 1 Spatula
Ingredients
- 130 grams Fresh Tomatoes finely chopped
- 1/4 red onion finely chopped
- 1 clove garlic crushed
- 1 egg
- 50 grams plain flour
- 1/2 tsp baking powder
- 1 tbsp fresh dill, parsley or oregano finely chopped
- 1 tbsp olive oil for frying
- salt and pepper
Instructions
- Place tomatoes, onions and garlic into a bowl
- Add egg, flour, baking powder, herbs and salt and pepper and mix into a thick batter
- Heat olive oil in a frying pan and drop in spoonfuls of the batter. Fry for 3 minutes each side until golden brown
