Protein Granola
This is a simple breakfast recipe which when combined with natural yogurt, fruit and honey makes a delicious granola bowl. The addition of protein powder helps to boost the nutritional value and keeps hunger at bay for longer. I use a vanilla flavoured protein powder, but an unflavoured one will work well too. The egg white helps the mixture to clump together to make delicious crispy morsels.
Equipment
- 1 250ml measuring cup
- 1 Large Mixing Bowl
- 1 large baking tray
- 1 large spoon
- 1 large lidded plastic or glass jar
Ingredients
- 2 cups oats
- 1 cup mixed nuts (eg walnuts, pecans, pistachios, almonds, hazelnuts, cashews) roughly chopped
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 cup ground flaxseeds
- 1/2 cup protein powder
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 1/3 cup maple syrup or honey
- 1/3 cup olive oil or coconut oil
- 1 egg white highly beaten
Instructions
- Place all ingredients in a large mixing bowl and stir well. Ensure the dry ingredients and completely covered with the wet ingredients and all components are well distributed
- Tip the mixture onto a large baking tray (lined with greaseproof paper if you wish)
- Cook at 160C for 30-35 minutes, stirring carefully halfway through cooking time.
- When cool transfer to a large jar or lidded container
