Maple Spiced Nuts
This delicious snack is perfect with drinks, as part of a cheeseboard, a protein boosting sprinkle over salads or just as a quick between meal treat

- 400 grams mixed nuts (walnuts, cashews, pecans, peanuts, almonds)
- 100 grams pumkin seeds
- 2 tbsp maple syrup
- 2 tbsp melted butter
- 1 1/2 tsp sea salt
- 1 tsp vanilla extract
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp garlic granules
Preheat oven to 165C
Line a lipped baking tray with greaseproof paper or a silicone sheet
In a large mixing bowl add the nuts and pumpkin seeds
In a small bowl combine the maple syrup, butter, salt, vanilla, smoked paprika, oregano and garlic granules
Pour the maple syrup and butter mixture over the nuts and seeds and mix well to coat all the nuts
Spread the nuts and seeds over the baking tray in a single layer
Bake in the oven, stirring after the first 10 minutes and then every 5 minutes until almost no maple syrup remains on the baking sheet and the nuts are deep golden brown
Remove from the oven and stir once more then allow to cool. The maple syrup will harden as the nuts cool
When cool, store in an airtight container
