This is a delicious fresh and tasty soup, ideal for spring and summer. It's quick and easy to make and can easily be doubled or tripled to make extra servings. It keeps well in the fridge for several days. Great served with fresh crusty bread.

1 Spoon
1 Blender or Liquidiser
- 1 tbsp oil
- 1 onion diced
- 1 clove garlic crushed
- 300 grams courgettes diced
- 250 ml vegetable stock
- salt and pepper
- 1 small bunch mint leaves
- 90 grams feta crumbled
Heat oil in saucepan and fry onions for about 2-3 minutes until starting to soften
Add garlic and courgette and fry for another few minutes
Add stock and salt and pepper and bring to the boil. Simmer for 7-10 minutes until the courgette is soft
Add the mint then puree till smooth
Serve with crumbled feta on the top
