Quick Fruit Scones

A quick and delicious way to rustle up a batch of warm fluffy scones in a matter of minutes. Delicious with butter and jam or as part of an afternoon tea. The base scone mix can be adapted to make a range of alternatives like cheese (with the addition of some grated cheddar), pistachio and cardamom (with the addition of some chopped pistachios and a little ground cardamom) or any other flavours you fancy experimenting with.

Equipment

  • 1 Mixing Bowl
  • 1 weighing scales
  • 1 Baking Tray
  • 1 Pastry brush

Ingredients
  

  • 200 grams self raising flour
  • 190 grams natural yogurt
  • 50 grams sultanas (or other dried fruit)
  • 1 tbsp milk for brushing (or some beaten egg)

Instructions
 

  • Preheat oven to 200C
  • Mix flour and yogurt to form a soft dough
  • Fold in sultanas and knead gently until smooth
  • Roll or press the dough out with your hands into a thick slab
  • Cut into rounds and place on a lined or greased baking sheet
  • Brush the tops with milk or beaten egg
  • Bake for 15 minutes until golden and risen
