Sweetcorn Fritters

This is quick and delicious recipe which makes a great lunch. Easy to prepare with basic store cupboard ingredients. Topped with a poached egg this can be transformed into a delicious veggie brunch.

  • 1 Mixing Bowl
  • 1 Wooden Spoon
  • 1 Frying Pan
  • 1 Spatula


  • 150 grams self raising flour
  • 1 tsp baking powder
  • 1 tsp smoked paprika
  • 160 ml milk
  • 1 egg beaten
  • 550 grams tinned sweetcorn drained
  • 1 spring onion chopped
  • 1/4 red pepper chopped
  • 10 grams fresh chives
  • 10 grams fresh parsley
  • salt and pepper
  • sunflower or rapeseed oil for frying


  • Combine flour, baking powder, paprika and milk in a mixing bowl
  • Add egg, sweetcorn, spring onion, pepper, herbs and salt and pepper and mix well.
  • Heat about 1cm oil in a frying pan. Drop spoonfuls of the mixture into the oil. Cook for 2 minutes then flip over and cook for a further 2 minutes until golden brown and crispy.
  • Serve hot
