Sweetcorn Fritters
This is quick and delicious recipe which makes a great lunch. Easy to prepare with basic store cupboard ingredients. Topped with a poached egg this can be transformed into a delicious veggie brunch.
Equipment
- 1 Mixing Bowl
- 1 Wooden Spoon
- 1 Frying Pan
- 1 Spatula
Ingredients
- 150 grams self raising flour
- 1 tsp baking powder
- 1 tsp smoked paprika
- 160 ml milk
- 1 egg beaten
- 550 grams tinned sweetcorn drained
- 1 spring onion chopped
- 1/4 red pepper chopped
- 10 grams fresh chives
- 10 grams fresh parsley
- salt and pepper
- sunflower or rapeseed oil for frying
Instructions
- Combine flour, baking powder, paprika and milk in a mixing bowl
- Add egg, sweetcorn, spring onion, pepper, herbs and salt and pepper and mix well.
- Heat about 1cm oil in a frying pan. Drop spoonfuls of the mixture into the oil. Cook for 2 minutes then flip over and cook for a further 2 minutes until golden brown and crispy.
- Serve hot
